VINIFICATION

To make a fine Grenache, the grapes must be harvested fully ripe. They must also be destemmed.

There are no great secrets to vinification here: it is all in the fruit. For extraction, 3 or 4 punch-downs and that’s it — then we let it infuse. The wine then goes through malolactic fermentation followed by a short ageing period in concrete vats. No oak.
