VINIFICATION
For once, we do not aim for over-ripeness, in order to preserve as much freshness as possible.
Fermentation takes place in concrete vats at relatively cool temperatures, with early devatting, especially for the Syrah when density reaches around 1030–1020. Extraction remains very gentle.
A short ageing in concrete vats then helps refine the wine. No oak.
