VINIFICATION
Harvested at night, the grapes are pressed immediately. Skin contact is kept extremely short to avoid extracting colour and tannins.
For this rosé, we retain only the free-run juice from the press; press juice is used for other wines. These are the ripest and finest juices, which are settled without delay.
As with the whites, fermentation temperatures are carefully controlled and moderated to avoid technical aromas and preserve aromatic purity. The wine then undergoes a short ageing on fine lees, with regular stirring, before bottling.
