VINIFICATION
A northern grape variety by nature, Chardonnay can still thrive in the south — provided its balance is carefully preserved. The main challenge is avoiding too much weight and not enough freshness. To achieve this, we harvest early, usually around August 15.
Our Chardonnay is picked at night, then pressed and immediately settled. Fermentation is carried out with carefully controlled temperatures: not too cold, to avoid overly technical aromas, and not too warm, so the fruit is not stripped away.
The wine is then aged on fine lees, with regular bâtonnage, which brings aromatic richness and complexity.
