VINIFICATION

Alicante-Bouschet is a delicate grape variety to manage in the vineyard: it can stall its ripening for one to two weeks, then shrivel within just a few days. Constant vigilance is essential.

Once the harvest date is set — usually in early September, as this is our earliest red — the colle (the harvest team, in Occitan) is brought together, since the grapes are picked by hand.

The grapes are then destemmed and fermented in tank for 10 to 15 days. Extraction is carried out gently, with punch-downs at the start of fermentation. A few pump-overs may be added if the material proves difficult to extract. Fermentation finishes at a warmer temperature to build more volume on the palate.

This wine truly lives up to its name and has plenty of surprises in store: yes, there is garrigue, those Mediterranean herbs that make you want to escape. But there is also the freshness of blueberry and the depth of cocoa. A true getaway.
