VINIFICATION

Viognier fully expresses itself when perfectly ripe, but preserving its freshness is key.

To achieve this, we harvest at night, at the very end of August. The grapes are pressed and immediately settled.

Fermentation holds no great secrets: temperature is carefully controlled — not too cool to avoid overly technical aromas, not too warm to preserve the fruit’s integrity.

The wine is then aged on fine lees, with regular stirring, bringing aromatic richness and complexity.
