Yields 45 hl/ha for syrah and cabernet. 35hL/ha for Alicante .
South - South West exposure hillsides.
Vinification
Traditional process and separate varieties. Short skin contact for Alicante to extract fruit and soft tanins. Longer maceration for syrah and cabernet. Gentle extraction by rack and return only. Matured in our cellars in stainless steel and concrete tanks.
Tasting
Robe: sombre with violet highlights.
Nose: very persistant red fruit notes.
Palate: 1st taste fresh and fruity the red fruit aromas leave place for licorice notes and stewed prunes. The end shows these 3 varieties caliber, tannins present and fondant. A wine that is a pleasure to drink on all occasions.
Serving suggestions
The aperitif, grilled meats and cheese eg; served at 16° with cold deli meats, between 18 - 20° with grilled meats, rib steak, beef under-cut, kebabs and Toulousan sausage, but also more refined dishes like duck with mushroom, rabbit with turnip, pigeon with raisins, or fricassé of chicken. Lovers of red wine will be happy as it also goes with fish and white meat as well as all sorts of cheese !
