Vinification

Grape must of Alicante-Bouschet blended with Languedoc eau de vie, aged in oak barrels. The liqueur is manually mixed every day during 3 weeks. The elevage is made in Solera since 1990 (oak barrels), that’s why this fortified wine is not dated. You will find a constant quality as time goes by.

 

Tasting

Dark and ruby robe, adorned with red copper reflections. Beautiful complexity on the nose which hexale aromas of red berries (blackcurrant and cherry, notes of prune in alcohol and rose petals.

The mouth, in aromatic harmony with the nose, is captivating by its beautiful balance and its delicate sweetness. The alcohol is well melted and participates in the length in mouth wich is revitalised by a nice freshness.

 

Serving suggestions

This fortified wine can be appreciated cold as an aperitif (10-12°C) either in accompaniment of dessert such as the melted chocolate, the figs in the oven sprayed with cartagène, the Tatin pie, the profiterolles, the Bavarian cream with red berries, surprised pancakes, chocolate mousse… Try it in a sweet-salty experience with foie gras in figs, blue cheeses and many other agreements according to your imagination and your culinary talents!
